Tenderloin is the most tender and leanest of all cuts. Spanning across either side of the hind quarter backbone, it is not used as a 'working' muscle, producing a superior tender cut. Best roasted whole or cut into portions. Ideal to pan-fry, grill, oven roast or finely cut to prepare steak tartare.
